Thai Pizza

Serves: 3 - 4

This is a really nice change to your traditional pizza. I love the nutty and spicy flavor mix, and of course the added carrot. On those days you’re craving pizza try this great specialty pie. Pizza doesn’t always have to be fattening and greasy, get your vegetable on!


Needs

Sauce:

¼ cup tomato paste

1 ½ tbsp sunflower butter - unsweetened

2 tbsp sriracha

2 garlic cloves - minced


Toppings:

bean sprouts

mozzarella cheese (don’t over cheese) – I like So Delicious dairy free cheese

2 small scallions

half of a bell pepper

2 hot peppers

cilantro – place on after done baking

1 carrot – julienne cut

half container of pressed tofu

2 tbsp coconut aminos soy replacement (Coconut Secret)

Dough:

I really like the Red Mill pizza crust mix – I used two flax seed eggs as an egg replacement.

Whole foods and Trader Joe's also make great pizza dough!


Getting Started

Start cutting up all your toppings. Once all your vegetables are ready, place your tofu in a pan and cook on high until golden brown. Then toss in your carrots and 2 tbsp of soy sauce replacement. When your carrots have started to soften (but still have a little crunch), turn off your heat.

Next, mix all sauce ingredients together in a small bowl and spread onto your dough. You may not need all of this sauce mixture though so keep that in mind. It should cover the entire pie but it is OK to see the dough coming through. Sprinkle on some cheese, you should be able to see the sauce still. Too much cheese will take away from some of the topping flavors. However, if you’re a big cheese fan then do what works for you!

Toss the rest of your toppings on (except for your cilantro) and place in the oven. Follow the directions for your dough on how hot your oven needs to be and how long it needs to cook.

Once baked and out of the oven go ahead and sprinkle on the cilantro and drizzle on some sriracha. Slice and serve!
