Teriyaki Tofu

Serves: 4

This is a beautiful and easy meal. I’ve made this many times for date night or just a great family meal together. It’s easy enough that Lil can help me make it and fast enough to make after work and still enjoy time together. Super satisfying and a deliciously healthy dish!


Needs

Goodies:

10 oz snap peas

1 red bell pepper

2-3 hot peppers (optional)

half a container of shishito peppers

1 container of extra firm tofu

Sauce:

2 garlic cloves – or 1 tsp of garlic powder

Coconut aminos teriyaki sauce – Coconut Secret’s brand is my favorite

Quinoa:

1 cup quinoa

2 cups water

Toppings:

sesame seeds


Getting Started

Place your quinoa and water in the rice cooker or as directed until done.

Cut your shishito peppers and set aside (separate bowl from other ingredients). Next, chop up your snap peas, red pepper, and hot peppers. Place them in a small bowl until ready to start cooking.

Press your tofu until drained as much as possible and cut into cubes. Place in a pan and cook until golden brown. Toss in your sauce ingredients along with your shishito peppers. Once your peppers have started to change color and soften, place in the rest of your vegetables. Cook until snap peas turn bright green.

Your all set! Serve your quinoa with tofu mixture on top, sprinkle on some sesame seeds and you’re ready to din. This meal is fast and easy but looks and taste amazing for those date nights or special family meals.
