This meal is one of our favorites. A traditional meal that my mother used to make but created in a much healthier and nutritional way. Read through the recipe and find out some great leftover meals for this too!
Needs
Lentils:
1 cup brown or green lentils - cooked
14.5oz diced tomato
½ cup tomato sauce
1 cup homemade sofrito – if use store bought only need 2 tbsps
2-3 bay leaves
1 tsp paprika
½ tbsp oregano
½ tbsp coriander
salt to taste
½ tbsp cumin
1 tbsp adobe seasoning
Sofrito: mix ingredients in a blender until a nice medium chunky texture.
1 ½ bunch cilantro
½ onion
1 red pepper
1 green pepper
1 tsp ground achiote seeds
hand full cherry tomatoes
3 cloves garlic
Potatoes:
1-2 sweet potatoes
1-2 tbsps coconut oil
salt to taste
1 tbsp oregano
Goodies:
1-2 avocados
cherry tomatoes
spanish olives
* your choice of rice to cook and add to the meal
Getting Started
Preheat your oven to 450 degrees fahrenheit.
Next use your rice cooker to cook your lentils. Once finished cook your rice and move the lentils in to a medium size pot.
Clean and chop up your sweet potatoes. Put in a mixing bowl with the rest of potato ingredients listed above and toss. Place on a baking rack and place into the oven. Cook for 15 minutes, toss and cook another 15 minutes.
Now put all ingredients listed for lentils into your pan and cook on medium heat for 10 minutes. After 10 minutes, place on a simmer for another 20-30 minutes.
Goodies list you will want to chop up and have ready at the table when served! The tomatoes are great with some apple cider vinegar, salt, pepper, and a dash of sugar. Gives the meal I nice zest and picks the meal up from feeling too heavy.
Once all is cooked, you are ready to serve! Love this meal for so many reasons but one great one is how versatile it is for leftovers. I’ve used the lentils for taco salad or add a little broth and vegetables to create a stew! Any extra sofrito is a great seasoning on vegetables, tofu, and the list goes on. Enjoy!
