This meal is a great holiday side dish or even an entrée for your everyday. It’s easy, nutritional, crunchy, cheezy and kid approved! You can’t go wrong with this one.

Needs
Cheez:
6 tbsp miso paste
2 cups almond milk
3 ½ tbsp nutritional yeast
2 tsp apple cider vinegar
1 tsp garlic powder
1 tsp onion powder
1 tbsp arrow root starch
Goodies:
1 cup panko breadcrumbs– extra to sprinkle on top
1 bundle of spinach – about a hand full or more
10 oz cauliflower riced (frozen)
1 – 1 ½ lbs. brussels sprouts
Toppings:
hot peppers
hot sauce
cherry tomatoes

Getting Started
Preheat your oven to 425 degrees fahrenheit. Clean and chop up your brussels sprouts, slice thinly like the photo below. Next chop up your spinach thinly as well, then rinse your cauliflower rice. Your cauliflower rice will still be frozen but try to wash off most of the ice so that it’s no longer clumped together.

Place your cut brussels sprouts and cauliflower rice into a large mixing bowl along with your cup of panko breadcrumbs. Preferably in a bowl that is not plastic, you’ll be adding the cheezy sauce in later while it’s still hot.
Onto your sauce! Add all Cheez ingredients listed above (except for the arrow root) into a medium mixing bowl and whisk. Now shift or sprinkle in your arrow root and stir at the same time to avoid clumps. Place this mixture into a pot on medium high heat. Once this start to bowl, stir frequently until thickened.
Brussels sprouts, cauliflower rice, and panko should be stirred together. Once stirred, drizzle in the sauce and mix again. Add in spinach and lightly stir once more.
Toss into your casserole dish and sprinkle on some extra panko.
Place into the oven and bake for 30 minutes. Now you’re ready to serve! This is great right away or even let it cool off and serve at a later time. I love to add some hot sauce on mine for a little kick and make this all the time as a tasty dinner meal. It keeps really well too so save some for lunch :)!
