Cauliflower Rice is such a nice change from brown rice and quinoa. It’s a great source of fiber and vitamin B. I love Trader Joe’s cauliflower rice, but you can really get this anywhere. Frozen or refrigerated will work just fine!
Needs
Carrot Sauce:
2 peeled carrots – Taste test them to make sure you grab the tasty ones!
4 tbsp mellow miso paste
1 tsp garlic powder
1 tsp onion powder
dash of salt
¼ cup alternative milk
Goodies:
1 bundle of baby broccoli
8 oz bella mushrooms or trumpet mushrooms
1 bag of cauliflower rice
Toppings:
parsley
red pepper flakes
black pepper
fennel seeds
*coconut oil needed for cooking
Getting Started
Cut up your vegetables and place into a pan with your cauliflower rice and a little coconut oil. While your goodies are cooking start your sauce.
Whisk together your miso, garlic powder, onion powder, salt, and milk. Place your mix in a small pot on medium heat. Once it starts to boil cut up your carrots and toss into your blender along with the sauce mix.
When your broccoli and mushrooms are cooked to your liking turn off your heat and start stirring in some of your carrot sauce. I don’t always use all the sauce so I would stir and gauge as you go how much you want in.
Super simple and nutritional meal for those days you don’t have a lot of time but want something filling and nourishing.
