This is a really nice and healthy alternative to coleslaw. Instead of it being a side dish this recipe can really become a main course! We love having this salad with sweet potatoes fries for dinner. This dish is so simple and easy to make and provides your body with energy! With salty, crunchy and creamy flavors, you’re sure to be satisfied!
Needs
Salad:
wedge of purple cabbage
wedge of green cabbage
1 large watermelon radish
15 oz can medium black olives
2-3 celery stalks
2-3 grated carrots
Dressing:
3 tbsp coconut amino – soy alternative
2tbsp nutritional yeast
dash of pepper
¼ cup apple cider vinegar
2 tbsp tahini
Getting Started
Cut and grate all salad vegetables and toss into a large mixing bowl. Drain your black olives and leave to the side.
In a small bowl mix your dressing ingredients leaving your tahini last to mix in. Whisk together and taste test to see if you want to add any more pepper etc.
Once the dressing ready, pour in with the vegetables and stir. Place in the black olives and you’re ready to serve!
Such an easy change to a “normal” salad and rich in flavor. The dressing tastes great and is healthy instead of being full of sugars. I love making this salad over the weekend and taking it to work for a quick and flavorful lunch. It stores well for 3-4 days and to refresh you can always add a little more apple cider vinegar.
